• Manuka Honey is a special type of mono-floral honey which is produced by bees that gather nectar from the flowers that grow on the Manuka bush (also known as Leptospermum scoparium) which grows in Tasmania, certain parts of Australia and New Zealand. Like a fine wine, Manuka Honey grows in flavour & darkens over time.

• Tasmania’s famous Leatherwood Honey comes from the flowers of the states endemic Leatherwood tree (Eucryphia lucida) which is unique to the pristine rainforest regions of Tasmania’s West Coast. A strong flavour with spicy undertones and a distinctive flavour. Leatherwood is regarded as one of the world’s finest honeys.
